I'm all excited thinking protein, right! Been working out, need some good healthy protein.. so I find Piri Piri chicken on @smittenkitchen and its some Portuguese recipe- I love Portugal, looks like I might have the ingredients. And since I'm all wound up about my @vitamix I decide I'll use that to make the marinade. I'm loving this cause it requires fresh parsley and I found some random sprigs out in the yard (geez, I need to water, lucky these babies held on). Anyhoo, I'm doing my thing and the hubs calls..he's bringing home take out. Listen, I'm all about spontaneity..so out comes a giant storage baggy and in the fridge goes the chicken. But guess what, the recipe says this thing's going to be even better after marinating for a few hours (or overnight).
